Cabbage, Apple and Pomegranate Salad

Ingredients
- ½ Medium-Sized Green Cabbage Head, shredded
- ¼ Red Onion, thinly sliced
- 1 Medium-Sized Apple, thinly sliced and tossed in the juice of half a lemon
- ½ Cup Pomegranate Seeds
Method
- Combine apple, onion, and cabbage in a large bowl. Tossing the apple in lemon juice will help to prevent browning, and it will add a tangy zest to the salad.
Ginger and Almond Dressing
Ingredients
- 2 Tablespoons Almond Butter, reduce added salt if already salted
- 2 Tablespoons Hemp Seeds
- 1 Tablespoon Agave Nectar
- ¼ Cup Fresh Orange Juice
- 1 Teaspoon Apple Cider Vinegar
- 2 Teaspoons Fresh Ginger, minced
- Salt to Taste
- Black Pepper to Taste
Method
- In a blender, combine all ingredients and blend until smooth. You can whisk by hand if you are only using almond butter, but a blender is easier.
- Pour the dressing over the salad and toss well.
